LOCAL DISHES

Tanjia

A tangia is a Moroccan amphora used as a cooking vessel to make a slow-cooked meat stew made with lamb or beef. It is an invigorating dish from Marrakesh, traditionally nestled into ashes for its long, slow cooking, where it's nurtured until the meat reaches an exquisite confit texture while remaining intact. Containing no vegetables (unless you count the garlic), it's all about the aromatics: preserved lemons, saffron, Moroccan olive oil, and heaped spoonfuls of cumin.

Locals' tip: Enjoy your Tangia accompanied with a cup of Moroccan Mint Tea!

Couscous

Couscous is an authentic Moroccan dish with Seven Vegetables, the ultimate comfort food to enjoy with family and friends. Lamb, beef, or chicken is stewed with assorted veggies, then served atop a mound of light, fluffy steamed couscous. A rich broth seasoned with pepper and turmeric is poured over, and the dish is also topped with a caramelized onion and raisin garnish called Tfaya.

Locals' tip: Couscous is a communal dish served weekly for Friday lunch, so gather around it to appreciate it better.
